We buy finished lambs locally direct from local sheep breeders. The lambs are from James Thomas at Paternoster Farm, Hundleton overlooking the Cleddau Estuary. The pastures receive plenty of moisture from the fresh sea breeze, creating lush grass and thus succulent lamb. James uses a Texel Ram, which throws lambs with good conformation, on Various Breeds of Ewe including Poll Dorset, Welsh, Speckled Face, Pure Texel, Welsh Mule Cross Ewes. James breeds the Lambs all year round to ensure a good supply of the right size lamb for our customers. The whole lambs range from 17 to 20kg when they arrive back at the farm shop for hanging.
We dry age and mature the lambs for 7 to 10 days in our chiller to develop the tenderness of these succulent lambs.

We are hoping to have some of our own lambs and ewes for mutton in the near future, sourced from a local breeder. However we have to get the farm stock fenced with sheep netting. Our fields were just fenced with barbed wire for the cattle, but sheep and lambs have a habit of wanting to get out. The Grass is always greener on the other side...
